Nagano Prefecture is the prefecture with the longest life expectancy in the country, and the reasons behind this are being explored in detail. One reason that has been highlighted is Nagano's food culture and intake of products of fermentation such as miso. Nagano City has teamed up with the Institute of Fermentation for the Future, and a course is now being offered in English about the benefits of fermentation and how fermentation works. This course will certify participants as Hakko (Fermentation) Ambassadors, so you can reap the benefits of fermented food products and share the good of fermentation with the world.
